The actual tasks of the meat processing industry are the rational use of raw materials, the expansion of the range of meat products that meet the quality requirements of safety for a healthy diet of the population. The irrational use of secondary raw materials and waste from the meat processing industry can lead to environmental and economic problems.

The aim of the work is improving the technology of obtaining meat-bone paste from rib and vertebral bones of cattle and ensuring the food safety of its use in the production of meat products.

The following results are expected to be obtained: various methods of processing meat-bone raw materials will be determined; dangerous factors affecting the food safety of processing rib and vertebral bones of cattle into meat-bone paste will be determined; thei nfluence of various factors on the degree of grinding of bone particles in meat-bone paste will be investigated; technology for producing meat-bone paste with the use of optimal the method of splitting bone particles; the technology of meat product with the addition of meat-bone paste and its testing inproduction will be developed; a food safety system for the production of meat product with meat-bone paste from rib and vertebral bones of cattle based on HACCP will be developed and approved; technical specifications and instructions for the production of meat-bone paste from rib and vertebral bones of cattle will be developed and approved. The results of the research will be published in at least two articles in peer-reviewed scientific publications indexed in the Scopus database with a percentile of at least 50 and one article in a publication recommended by CQAES MES of RK or the HAC of the CIS countries.
