AP26198315 «Scientific and practical aspects of technology development of functional dairy products based on new generation biologically active additives».

2025-2027 36 month

Project Leader

Zharykbasov Erlan, NJSC «Shakarim University», Dean of the Research School of Physical and Chemical Sciences, PhD.

Relevance

This project's research on identifying probiotic microorganism strains and isolating postbiotics from them is relevant and promising, as it allows for the development of a postbiotic-based dietary supplement for use in developing functional dairy products.

Goal

The goal is to study the strains of microorganisms for obtaining postbiotics, creating a biologically active supplement based on them with its subsequent application in the development of functionally oriented dairy product technology.

Expected Result

The direct results of the project include the development and implementation of a dietary supplement containing postbiotics with specified properties, as well as the development of a technology for a functional dairy product with increased biological activity. Qualitative characteristics include purity and preservation of the biological activity of postbiotics, confirmed experimentally. Quantitative characteristics, such as the content of components in the formulation of a dietary supplement and dairy product and their effect on the biological activity and indicators of the final product, will be determined and confirmed in the course of research. The indirect results of the project include publications: - 2 articles for publication in the KOKNVO journal; - 3 articles for publication in a peer-reviewed foreign journal with a CiteScore percentile in the Scopus database of at least 50 (fifty); - filing 2 applications for a patent of the Republic of Kazakhstan, including 1 patent for an invention; - 1 article for publication in the materials of a scientific and practical conference.
